AEGIC is exploring the unique opportunity to position Australia as a highly valued premium hard noodle wheat supplier in Asian markets.
With further investment from the South Australian Grains Industry Trust (SAGIT) and the Grains Research and Development Corporation (GRDC), this project will continue into phase 2 (from July 2025).
The project involves working closely with flour mills in markets such as Taiwan, Japan and South Korea to assess Australian Hard (AH) wheat samples for high quality noodles, and other products such as dumplings.
The project has so far demonstrated that samples of AH wheat from South Australia have excellent potential for these products. While results are promising, further investigations will be essential to ensure the consistency of product quality attributes in each market.
2025
In August 2025, project leader and AEGIC Senior Research Scientist Dr Siem Siah worked with a flour mill in South Korea on sensory evaluation of noodles and dumplings.
The trials demonstrated that South Australian hard wheat could be an excellent fit for premium noodles and dumplings, especially for mouthfeel: a key sensory quality attribute.
In July 2025, a separate larger, pilot container-scale trial with a flour mill in Taiwan showed that South Australian AH wheat produced noodles with excellent colour and mouthfeel quality attributes.
We look forward to continuing to collaborate with flour mills on further validating these findings.
