Udon texture requirements

This project addresses a technical gap in the understanding of the minimum and ideal texture requirements for Japanese udon noodles, specifically firmness and elasticity.

By working with customers in Japan, this project will establish minimum and ideal quality requirements for udon texture to support wheat breeding companies and the classification panel of Grains Australia in breeding and assessing ANW and APWN lines.

This project is supported by Grains Australia.

Completed (July-September 2025)

  • We completed the first progress report including preliminary insights on the texture ranking of existing ANW varieties.
