Udon texture requirements (new project)

This project addresses a gap in the understanding of the texture requirements for udon noodles, specifically firmness and elasticity.

By working with customers in Japan, this project will establish minimum quality requirements for udon texture to support wheat breeding companies and the classification panel of Grains Australia in breeding and assessing ANW and APWN lines.

Completed (April-June 2025)

  • The project officially commenced in July 2025, however in June 2025 we conducted sensory evaluation with the Japan Flour Millers Association (JFMA) to begin identifying colour and texture boundaries for udon noodles.

Scheduled (July-September 2025)

  • We will complete the first progress report including preliminary insights on the first sensory session with JFMA in June 2025.
