Developing a new high value noodle market for South Australian growers

Phase 2 of this project will commence July 2025, with further investment from SAGIT and GRDC.

Asian markets recognise Australian Prime Hard (APH) and Australian Noodle Wheat (ANW) as superior for noodle making. AH is less recognised for noodles, however, through market engagement in China, AEGIC found that a parcel of AH varieties was highly rated for premium noodles.

In response, AEGIC is engaging with other high-value Asian markets including South Korea, Taiwan and Japan to explore the unique opportunity to position Australia as a highly valued AH noodle wheat supplier.

Completed (April-June 2025)

  • The wheat for a pilot container trial has arrived at a major Taiwanese mill, and a commercial trial run is planned.

Completed (July-September 2025)

  • In July 2025, we conducted a container-scale trial with a flour mill in Taiwan that showed that South Australian hard wheat produced noodles with excellent colour and mouthfeel quality attributes.
  • In August 2025, we conducted a trial with a flour mill in South Korea that demonstrated that South Australian hard wheat could be a good fit for premium noodles and dumplings.

Scheduled (October-December 2025)

  • We are in the process of organising container-scale pilot trial runs of South Australian hard wheat from the forthcoming harvest, in partnership with the Taiwanese and South Korean flour mills and a major grain handler.
  • We are engaging in discussions with a Japanese flour mill to explore the potential introduction of South Australian hard wheat for the Japanese market.
