Mathew Rees is one of AEGIC’s key technical milling experts. Mat plays a crucial role in supporting many AEGIC research projects, as well as supporting the Australian grains industry through AEGIC’s wheat and flour quality testing and training services.
Mat is a highly experienced and respected flour milling specialist. He has been with AEGIC’s Sydney laboratories for 25 years, dating back to when were known as the Bread Research Institute of Australia. Mat is active in the industry and is currently President of the Australian Technical Millers Association.
Mat has a deep appreciation of the importance of wheat and flour quality in meeting customer needs. For Mat, increasing value in the Australian grains industry means doing his part to ensure growers have access to good markets for Australian grain, while ensuring customers understand the true value of our grain by providing technical support and information. On the supply side, Mat understands the crucial importance of providing the Australian industry with the right market insights at the right time to ensure we keep delivering the grain that customers need.
An important part of Mat’s role is delivering AEGIC’s sought-after Wheat Quality and Flour Milling training course at AEGIC’s Pilot Mill in North Ryde, Sydney. This course – well known in the domestic wheat and flour industry – gives participants a solid understanding of the importance of wheat and flour quality for making the best end products, both domestically and in export markets.
In 2024, Mat has been active in South East Asia supporting our delivery of the AEGIC eLearning flour milling training platform, and providing technical information and support to help South East Asian millers optimise the value of Australian wheat. Mat’s favourite aspect of working at AEGIC is the satisfaction of contributing to AEGIC’s various research projects, and working with a team of great people.
